It's always good to have healthy snacks on hand for those busy times you need to grab something but crave a wholesome treat. These are super versatile, easy to have the kids help you make and taste delicious!
No Bake Protein Energy Balls
I love being able to involve me kids with prepping for the week. Making a big batch of these to keep on hand is key. They are perfect for lunches, after school snacks or sports sideline pick me ups!
These treats are one of my all time favorite random creations. I was craving a quick and easy raw treat one night, and literally threw whatever I had in a bowl, mixed and out came this delicious snack that my friends and family went nuts for! The best thing about these is that you can add or take out whatever you feel like, they are so versatile.
I made them into both balls and bars, but the balls are my favorite. I keep them in the fridge but they don't last longer than a few days! Give them a try, you won't regret it, especially to help fuel those little ones running around!
Why are protein balls good for you?
Protein balls are not always good for you, it really depends on the ingredients. If they are filled with great wholesome things, then they are awesome for you! So always make sure to pay attention to what's inside, like anything!

No Bake Protein Energy Balls
Equipment
Ingredients
- 2 cups rolled oats , gluten free if needed
- ½ cup pumpkin seeds
- 1 cup hemp seeds
- ½ cup cacao nibs
- 1 cup pecans , any nut works or leave out for nut free
- ½ cups goji berries
- 2 ½ cups dates
- 1 teaspoon vanilla extract
- pinch sea salt
- ½ - ¾ cup water
- ½ cup unsweetened shredded coconut
Instructions
- Place oats, pumpkin seeds, hemp seeds, cacao nibs, and pecans in a large bowl. Place goji berries in a small bowl and fill with warm water. Allow to soak for 5 minutes or until they soften a bit. Once slightly soft, drain water and place berries into the bowl with the rest of the ingredients.
- Place dates, vanilla extract, salt and water in a food processor. Mix until partially smooth and partially chunky. This is similar to my date paste recipe but not as smooth and has a tad less water.
- Put into the bowl with the rest of the ingredients. Using your hands, mix everything together well until you get a dough like consistency.
- You can either press into a parchment lined baking pan to make bars or roll into 1 inch balls. Roll the balls in shredded coconut until covered if desired.
Notes
- You can make these as just balls or just bars. If you only make balls you will get about 30, if you make bars you will get two 9x9 pans.
- The nuts are optional but add a great crunch.
- Add or take out anything you want, these are super customizable!

Hi Monica! These can keep in the fridge for quite some time, but after a few weeks they tend to dry out. They also do freeze well. Just make sure to wrap well so they don't get freezer burn!

Nice healthy treat. Sub. dried cranberries for goji when I didnt have them, added 1/2 cup chopped dried apricots, chocolate mini chips, in place of the nibs, and added 3 chopped dried figs. A very versatile recipe that goes together fast. Made in a pan for quick assembly and portability.

I didn't have any gogji berries but I followed the rest of the recipe exactly. It was a little bit dry so I added about 1/2 cup sunflower seed butter and then it was perfect. If made about 35 fairly large balls. I will make it again and maybe add dried cranberries insted of gogji berries because I usually have those on hand.
